This alters the hemoglobin"s affinity for oxygen. Patients with high a1c levels, the saturation is shifted up, meaning less oxygen is being released by hemoglobin and delivered to tissue. It becomes harder for the blood to offload oxygen to the tissues. One of the solutions bird have to prevent high glucose from causing problems, the birds have less glycated hemoglobin. In some way the hemoglobin protein in birds is far more resistant to binding with hemoglobin.
