When two galaxies collide, none of the stars in these galaxies directly collide with each other. In some years we will collide with the andromeda galaxy. So much empty space between the stars that essentially the stars will pass through each other, but will gravitationally interact effecting the shape which the overall galaxy looks. The only thing that does collide is the gases in these galaxies in their interstellar medium. The way a galaxy looks after they collide depends strongly on the gases within the galaxies. Earlier in universe interactions were much more common because the galaxies were less separated by space. Two galaxies with a lot of mass will have large changes.
