Document Summary

How does the body use carbohydrates: for energy: Humans store glycogen packed together stored in our liver: essential fuel for the brain and central nervous system. Need carbs to metabolize fat: protein sparing. 50-75% of our total calories is from carbohydrates. <10% comes from added sugar (table sugar) and free sugar. Monosaccharides=glucose (gets absorbed right into our blood stream, fructose (gets digested by liver and is turned into glucose), galactose. Starch: plants storage form of glucose, packed in granules. Glycogen: storage form of glucose in humans and animals. Fibre: supporting structure of plants, people cannot digest fibre but some animals can, t(cid:449)o types of fi(cid:271)res solu(cid:271)le ((cid:448)is(cid:272)ous, fer(cid:373)e(cid:374)ta(cid:271)le fi(cid:271)res that are gu(cid:373)(cid:373)y a(cid:374)d add thickness) and insoluble. Both contain the same amount of carbohydrates, yet the makeup is very different. Coke has 0% starch and 0% fibre. Banana has 70-80% starch and 3-3. 5g fibre. Types of carbohydrates in each is very different.
