Spices: spices are usually used to season food, dried for use and have distinctive flavors and aromas, spices tend to come from a variety of plant parts (usually not the leaves) and originate from tropical regions . Spices discovered in the far east: magellan discovered spice islands (maluku islands in the indonesian archipelago). These islands are the origin of nutmeg and clove. Cinnamon (cinnamomum)- family lauraceae: native to india, sri lanka, one of only few spices obtained from bark, cinnamon (cid:862)sti(cid:272)ks(cid:863) are produced by stripping the bark from the trunks, branches, and shoots of trees. Cinnamon (cinnamomum spp. : cinnamon may be obtained from these two plants, cinnamomun verum, cassia (cinnamomum aromaticum, true cinnamon is native to india and sri lanka, cassia is from southeast asia. Cinnamon collection: bark is stripped by hand, rolled and allowed to dry for a day. Step 2: a lengthwise incision is made in order to release the inner bark as a roll.
