The universe is everything, a system is the study. Surroundings is the rest of the universe that interacts with the system. Isolated system where there is no change in heat flow (eg. thermos with coffee in it) the energy change is very little so we tend to neglect it. There is energy in the system, when you do a process energy flows. If there is not process not heat, no process means no work. 0th law of thermodynamics: heat flows based on temperature difference: eg. ice cube melting heat is going into the ice cube making it melt. Q=c t: heat capacity depends on the system that you are defining. If the system is isolated then you have a conservation of energy. It is possible to see a different sign convention. The only work we are interested in is gases expanding with heat.
