Seen in legends, medieval history, fairy tales, gothic literature. The pervasive nature of magic makes it difficult to find the starting point for fantasy. Rooted in myth, legend and folklore; all three are doing something different than what modern fantasy does. Fantasy deals with the impossible while the three listed are rooted in history; shaped by religious or cultural belief. Myths meld together a representational system of religious belief, fantastic and have impossible things but are also believed in. Legend even more rooted in history (king arthur) despite fighting dragons and the existence of merlin.
