Let"s start by considering the following analogy: your personality is an abstract concept and the way it is manifested in everyday life is through behaviours that are dependent on the circumstances of your life. Similarly, think of phonemes as abstract categories that can have multiple actual pronunciations, depending on the surrounding sounds in a particular word. "phone" is just the general word for a speech sound. "phoneme" is a more theoretical abstraction, you can think of it as a sound category. /r/ and /b/ are different phonemes in english).
