Primary layer of packaging in immediate contact with the product, legal and marketing messages: packaging migration chemicals moving from package into food product. Tertiary - packaging that is not typically seen by the consumer and removed by retailers before product is displayed. Unit load - combination of single units that can be easily moved by a pallet jack or fork lift: pallet patterns important, distribution of weight, maximizes space and protects product from getting crushed. Containment many products just need to be contained to be handled. Protection - many products are susceptible to environment conditions and require protection to ensure that the product is in good condition when it is used (tamper resistance too) Result of distribution: crushing, shock, vibration. Barrier properties: moisture cereal, breads, oxygen potato chips, meats, light oils, potato chips. Definition substitution of atmospheric air with a protective gas mix to extend the shelf life of fresh products.
