Bile has hydrophobic sides that associate with lipids. Polar side chains of bile associate with water. Micelle- stays small droplet because it doesn"t sense the water. Free fatty acids can absorb by lipase if have small droplets. Monoglyceride can absorb by lipase if we have small droplets. Chylomicron= a droplet of fat present in the blood or lymph after absorption from the small intestine. Like a micelle, fat surrounded by proteins because blood is water loving, so must make fat able to travel through blood. Want it to go to blood but can"t because its so big, can"t get into capillaries. Absorption into lymphatic vessels eventually drains into large blood vessels, as it travels through, it gets smaller and smaller so it can fit to blood vessels. 2 classifications of vitamins: fat-soluble and water-solulbe.
