NTR 108 Lecture Notes - Lecture 7: Whole Food, Oxidative Stress, Phytochemical
Document Summary
Incidence: cancer is the second leading cause of death in the us (1st is heart disease) a. Due to a higher incidence in the elderly: estimated that 1 in 4 people in the us will develop cancer (lifelong rate, epidemiology (study of population) Cancer: cells multiply out of control & disrupt normal functioning. Tumor: rapid &/ uncontrolled in # of cells. Don"t invade into other tissues: malignant neoplasm. Resist treatment (surgery, radiation & chemo often used) Harmful cell don"t adhere, they invade surrounding tissue: carcinogenesis, carcinogenesis (initiators): cancer causing substance (initiates cancer) Plant, food, & microbial skin: promoter: cell division, doesn"t cause cancer. Dietary fat perhaps great cancer & prostate cancer. Doesn"t initiate cancer (not carcinogen) - appears to promote by: Causing the body to secrete more hormones (estrogen) which creates a favorable environment for cancer growth. Promoting the secretion of bile acids into intestine which microorganisms may convert to carcinogens in the colon.
