Non ionized forms of amino acids are polar and reacts well with water, another polar molecule. Ionized form of amino acids have an opening and a covalent bond site, so as to bring in another amino acid. Within the polypeptide, the peptide bonds form a backbone with three key characteristics. R-group orientation side chains interact with each other and water. Directionality free amino group on left called a-terminus; free carboxyl group on the right.
