In arcgis, you can do the following in several ways: add a field to attribute table, delete field from attribute table, use field calculator, calculate geometry, all of these permanently change the original data. Changing what is typed in individual fields: w/in an edit session, edit using table window, edit using attributes window. Editing vs calculating: editing fields vs calculating them, can undo (ctrl + z) or redo (ctrl + y) in edit session, not possible when calculating outside edit session, adding/ deleting field is not allowed during edit session. General steps for editing spatial data: start an edit session using editor toolbar, define your workspace (folder or database, choose target feature + construction, sketch you edits, save your edits + stop edit session.
