NFS 043 Lecture Notes - Lecture 8: Saturated Fat, Essential Amino Acid, Kidney Stone Disease
Document Summary
Most people consume enough protein from food. Nitrogen from excess protein has to be cleared and that burdens the kidneys. Protein supplements have more calories than normal foods. Excess of one amino acid can block absorption of other amino acids. Excess aa can cause diarrhea, inflammation, and liver issues. Nitrogen balance: measure of nitrogen consumed vs. amount excreted. Nitrogen equilibrium/zero balance - normal state of adults. Protein quality provide all essential amino acids. Becomes a greater concern when food availability is limited. Limiting amino acid = essential amino acid not present in sufficient quantities, limits protein synthesis. Complementary proteins = 2 proteins that complement each other, so essential acids missing out from one are found in the other (employed with vegetarian diets) Grains & other plant foods = 70-90% absorbed. Cooking with moist heat helps absorption, cooking with dry heat can hinder absorption. Slow growth in children, brain and kidney impairment, weakened immune system, impaired nutrient absorption.
