NUTR 1010 Lecture Notes - Lecture 20: Vitamin A, Adipocyte, Collagen
Document Summary
Can be carried freely in the blood. Vitamin c cannot be produced in the body. Vegetables and fruits are the best dietary sources of vitamin c. Helps with the early stages of a cold - increase vitamin c intake within the first two days. A protein that makes up connective tissue, wrinkles. A key component in wound healing skin level. Bile acids are necessary for the fat-soluble absorption. We need cholesterol to produce bile acids and collagen to produce cholesterol. Vitamin c is the major water soluble antioxidant. It is water-soluble, so it mostly works in water-soluble environments like in the bloodstream. It donates its electrons to free radicals (atom, molecule, etc. ) Helps to protect dna, lipids, cells, and tissues from damage. Oxidation is when electrons are taken off of atoms. This can damage cells/tissues and their dna. This oxygen sometimes forms free radicals (or reactive oxygen species) during the process of energy metabolism.
