Document Summary
Nutrients needed by the body in smaller amounts. Needed in milligrams or micrograms (not tens or hundreds of grams per day) Enough can be found in a diet with sufficient calories from whole foods (non- refined) and fresh fruits and vegetables. Does not provide energy to the body (0 energy) Vitamins: organic compounds produced by plants and animals. Minerals: elements that are absorbed (as part of compound molecules) from the soil by plants, from plants and animals. Deficiencies are diseases caused by insufficient macronutrients in the diet. Two faces of malnutrition: undernutrition (insufficient calories and proteins) - decreasing globally, overconsumption (excess calories, overweight, obesity, and related diseases) - rising globally. Both undernutrition and overconsumption can lead to micronutrient deficiencies. Many nations suffer from both hunger and overconsumption. Essential organic nutrients that are needed in tiny amounts to make possible the processes of the body"s metabolism (allows the body to extract nourishment from food)
