It is because the pathways are unpredictable due to genetic and environmental factors (alcohol, smoking, etc. ) As for genetics, we can have polymorphisms that will give us more or less of certain enzymes. And the environment can also affect the systems, making them more or less active. It is their maximum capacity: the fastest rate at which they can catalyze the reactions.
