Cream first fed to churning cylinder fitted with beaters (where rapid conversion takes place) Then butter grains and buttermilk pass on to the draining section. First washing takes place en route with either water or recirculated chilled buttermilk. Working of the butter starts in the draining section by a screw. Leaving the working section the butter passes through a conical channel to remove any remaining buttermilk. Immediately after the butter is given its second washing, the high pressure of the water breaks down the butter into grains and any milk solids are removed. Vacuum pump is connected to the third section of the working cylinder to reduce the air content of the butter to the same level as conventionally churned butter the final section is the mixing section. Here butter passes through a series of perforated disks and star wheels. Also an injector for final adjustment of the water content. finished butter is discharged in a continuous ribbon.
