Document Summary
Trace mineral = need less than 100mg/day. 2/3 of body"s iron is in hemoglobin (blood) Iron binds oxygen molecules to hemoglobin iron molecule holds on to oxygen and this is how we transport oxygen throughout our body. Body cannot make hemoglobin without iron = cant transport oxygen without iron. Also component of myoglobin (transports oxygen in muscles = important when doing exercise) Found in enzymes needed to metabolise energy from cho"s, fat, protein. Cytochromes in the electron transport chain (last step in citric acid cycle) Where do we get it in the diet. Found in meat, poultry, fish and seafood, liver has a lot. Its in a heme molecule from hemoglobin (blood) or in myoglobin (muscles) Added to some flour or breakfast cereals, cookies, etc. Phytates (whole grains, legumes can still get iron from these but doesn"t help) How to increase absorption of non- heme iron. Who needs more/ is at risk for deficiency.
