- Phospholipids

Hydrophobic tails are inside
o Bilayer

Hydrophobic tails are on inside away from water

Held together by hydrophobic/hydrophilic interactions
- Saturated vs. Unsaturated
o Saturated fatty acid chains lack double bonds, resulting in phospholipids with a
straight structure that favors tight packing
Example: butter
Not liquid at room temperature
Turn into liquid if heated (goes back and forth between liquid and solid)
o Unsaturated Fatty Acids have one or more double bonds that introduce kinks in
the phospholipids, reducing the tightness of packing
Double bond puts a kink in it
Tails cant pack together as tightly (forming a solid)
Ex: olive oil
o Can happen with membranes too
Unsaturated vs. Saturated Hydrocarbon Tails
Fluid (unsaturated hydrocarbon tails) & Viscous (saturated
hydrocarbon tails)
Cholesterol
Hydrophobic rigid planar group of rings, hydrocarbon tail
Hydrophilic head group
Polar head groups
Amphipathic structure of cholesterol allows it to pack tightly with
phospholipids
- Proteins in the Membranes
o Transporter
Allows molecules to move across membrane
o Receptor
Cause a change in the shape
o Enzyme
Turning molecules into other molecules
