The fat is now more stable having a longer shelf life. Fat has changed from a liquid to solid at room temperature. Saturated fatty acid is straight and stiff, allowing them to stack easily. Unsaturated fatty acid has a kink which doesn"t allow them to stack easily. Digestion takes place in the small intestine as fat is made soluble in the watery environment then fat can be chemically digested. Bile emulsify triglycerides and wash them into the digestive juices.
