Document Summary

Women who are not unusually thin have a much bigger advantage in long0distance swimming. 3 carbons are linked together and are each in turn attached to an oxygen atom. This distinguishes one kind of fat from another. Those carbon chains can vary as per their length. Called saturated because all of the possible hydrogen atoms that can be there are there. This is to contrast with the unsaturated fat where there are fewer hydrogen atoms by two for each of the double bonds that we will soon learn about. They are a mix of molecules that are quite similar to one another. There is no exact structure that will be delineated for these. One of the chains has two bonds between two of the carbon atoms. If they are doubly bonded, the shape will then change. And each of those carbon atoms has only one hydrogen attached to it. If there is more than one double bond, it is polyunsaturated.
