Structure: vitamins are individual units i. e. not linked together like polysaccharides or protein bonds) whereas minerals are inorganic molecules that retain their chemical identity i. e. they change from point of ingestion to when they are excreted. Function: they don"t release energy but act as cofactors and help enzymes that release ener from macronutrients. Minerals are not destroyed while vitamins are destroyed. Both are vital to life, organic and obtained from eating foods. (except minerals= inorganic) Potassium --> mineral--> acts like a water soluble vitamin. Calcium--> mineral--> acts like a fat soluble vitamin. Bio availabilty= the rate and extent to which a nutrient is absorbed and used.
