PSYCH 1X03 Lecture Notes - Lecture 7: Calorie, Nutrient Density, Nutraceutical
Document Summary
Various reasons that contribute to factors on what people eat: (page4-5) Functional foods: foods that contain physiologically active compounds that provide health benefits beyond their nutrient contributions; sometimes called designer foods or nutraceuticals. Body composition is majorly made up of water (about 60% of body) Fat, and protein: energy released from carbohydrates, fats, and proteins can be measured in calories, calories: units by which energy is measured, energy is expressed in kilocalories. Kilo(cid:272)alories are (cid:272)o(cid:373)(cid:373)o(cid:374)ly referred to as (cid:862)(cid:272)alories(cid:863). One kilocalorie is the amount of energy needed to raise the temperature of water (1kg) by 1 degree celsius: amount of energy in food depends on the quantity of carbohydrates, fats, and proteins it contains. Alcohol (1g)=29kj or 7kcal of energy (but not considered a nutrient) Therefore since fat yields most energy (per gram), it is considered to have greater energy density than proteins or carbohydrates: energy density can be calculated by kcal/grams(of food)=energy density.
