Phosphorous
- 85% of phosphorous is found in bones
- 15% in soft tissues and fluid in the body
o cell membranes: water soluble head of phospholipids,
o synthesis of genes and protein
o energy storage and realease (ATP, creatinine)
o metabolic reactions: phosphate can avtivate or dactivate certain enzymes
o acid base balance
- more readily absorbed than calcium, 60-70% that is ingested is absorbed
- Vitamin D aids absorptions through active
- Important component of molecules with structural or regulatory roles
- Toxicity is rare, but can lead to bone resorption
- Deficiency is rare, most common in premature infants
Magnesium:
- 50-60% is found in bone, where it is essential for maintenance of structure
- cofactor for over 300 enzymes
o necessary for ATP from carbs, lipid, and protein, stabiliazer or activator
o needed for active transport of sodium and potassium
o DNA and RNA synthesis
o Protein synthesis
- Magnesium deficiency is rare
o Alcoholism, malnutrition, kidney, and glycemic index disease or in peple taking
diuretics
o May cause nausea, muscle weakness and cramping, mental derangement and
changes in blood pressure and heart beat
- Toxicity is rare
o UL for adults is set at 350mg from nonfood sources of magnesium, nausea,
vomiting, low blood pressure
- Sources: nuts, seeds, legumes, and leafy greens such as spinach and kale, processed
foods are very poor sources
- necessary for calcium homeostasis
Sulfur
- dietary foods in protein foods and sulfur containing amino acids in vitamins
- dietary sulfur is also found in non food additives such as sulfur dioxide, sodium sulfie
and sodium bisulfite
- sulfur containing amino acids such as methionine and cysteine are needed for protein
synthesis
- vitamins thimin and biotin contain sulfur
- no recommended daily intake limit
