NUTR 1010 Lecture Notes - Lecture 28: Carbohydrate Metabolism, Oxidative Stress, Bioavailability
Document Summary
Inorganic elements that our bodies need in order to function. Major minerals we need more than 100 mg/ day. Trace elements we need less than 100 mg/ day. Trace elements include iron, zinc, copper, selenium, iodine. Required in amounts less than 100 mg per day. Have been difficult to study as they are difficult to remove from the diet. Involved in the functioning of over 300 different enzymes. Superoxide dismutase , important for protecting cells from free radical damage from oxidative stress. Cchs suggests that a number of canadians are not meeting their zinc requirements. Richest sources of zinc are found in animal products. Better absorbed from animal sources than plant sources. Often bound by phytates , reducing its bioavailability. Vegetarians are more vulnerable to having inadequate zinc intakes. Vegans may be 50% more vulnerable due to the lower bioavailability of zinc from vegan sources. Canadian regulations require some foods to be fortified with zinc.
