It is a very well used plant source. Soybeans are rich in protein, vitamins and minerals, calcium and iron. They are divided roughly into 2 classes. Non fermented soy foods including soy milk, soybean curd or tofu, toasted soy powder, and bean sprouts. Fermented products include soy sauce, miso and tempeh. Soy our is make from roasted soybeans that have been grounded into ne powder. Soybeans use a type of bacteria to get nitrogen from the air.
