Two possible secondary structures: alpha=helix, beta=pleated sheet. What leads to each, what is the difference when they are being produced: the pleated is more rigid fibre structures. Charged polar are going to be in the helix because of flexibility. Proteins can come as a single strand or it can be built by combining different portions of tertiary structures in a poly peptide there are polar which form helix, and non polar which more pleated sheets, called domains. Each of these can form quaternary structure, (the assembly of these secondary and tertiary and primary) 2 alpha and 2 beta-they needs to be correctly assembled and structured- Job is to find oxygen and transport it. One small change in the structure and we get an entirely different structure and reactions and a lot of consequences. Form and function that go hand in hand which depends on polarity -be ready to argue that on the midterm on saturday.
