Limonene is part of a group of molecule called turpines which are made up of conjugated double bonds called isocrine - when you have multiple isocrine unites in the structure of molecule they are classifies as turpines. Ex: essential oils, balsams fall in category of turpines and they have different number of isocrine units in their structure. Lemonene has isocrine units which has an asymmetric centre which allows for 2 stereoisomers (2^1 = 2) Those two stereoisomers will be a pair of enantiomers s/r enantiomer. R isomer is found in oranges so sometimes they have a sweet taste. S isomer is found in lemons making the taste sour. The change in stereochemistry has a profound difference in the actual taste of the compound. R carbon also has two configurations and has similar effect.
