Foods and Nutrition 1021 Lecture Notes - Lecture 1: Resveratrol, Human Body, Saturated Fat
Monday Sept 11, 2017
Chapter 1- Food choices and Human health
Refer to ppt notes from Day 1
• If we can get a perso’s genetic material we can know more
Scientific Research
• Who provided sponsorship, depends on who favors it and any chance of biased
• Placebo and drug who should know
• Media and Social Media- more focus on small study that shows fireworks? For eg
somebody losing healthy weight 1-2lbs per week or 20 lbs in a week (unhealthy)
• Credentials of a person
4 types
• Case studies- Within an individual
• Epidemiological studies – Cause and effect, looking at populations
Corelation- Looking at the chemicals and the food- resveratrol in red grapes lead to
lower heart diseases not red wine
Cohort- monitoring over time
More and more kids with lip ties and tongues
Correlation- more folic acid- lip ties or tongues and monitoring the intake of folic acid
and looking at effects
• Intervention study
- More people the better
- With an experimental group and a control group- one group given actual one and
the other one is given placebo
• Lab Studies
- Animals are used
Other ways nutrition is used
- Chemical analysis of food
- Clinical records
- Look at outcomes in past – Women malnourished in certain trimester could lead to
certain diseases
- The baby inside learns to adapt to no food and can lead to obesity later in life

Human Nutrition
- Food- We eat food, an acceptable substance and has physical and chemical
properties, nutrients
- Food should be enjoyable and sometimes craving takes over
- Nutrition- food, and human behavior
- What the purpose of carbs, proteins, fats and hat’s their importance in body
- Diet – everybody is technically on a diet
- Nutrients- keeps the body functioning
- Proteins and functions and other macromolecules
Human body and its food
- Every single food is organic- it means it contains carbon
- Water and minerals are not organic
Important Nutrient terms
- Essential nutrients- get from food, amino acids, Vitamins and minerals
- Non- nutrients- whole food helps more than capsules of the same thing
- Elemental Diet- As soon as the intestinal and stomach muscles stop it can lead to
issues- keep them moving
- In situations where we a’t use those muscles we use tube feed (still use the gut a
little bit)
- TPN- like an IV for people on life support etc.
- Dietary supplements liquid absorbs better than powder and pills
- Nutraceutical- Food products in pill form
Calorie
- calories every day to keep you alive
- Its energy
- If raise the temp by 1 degree Celsius for 1 g of water
- Fats provide us with more energy- we need to limit them as they are dense
- Alcohol is not a nutrient but provides fats and gets stored
- Carbs- 4cal/g
- Fats- 9cal/g
