Water is an excellent solvent
A solvent is a fluid in which another substance, called a solute, can be
dissolved
o You can have many different kinds, but the solvent is what is the solid
or what is the liquid
Polar/charged molecules form hydrogen bonds or ionic bonds with water
molecules
o These are the molecules that can be dissolved in water. We refer to
these as hydrophilic
Hydrophilic (water loving): sugars, dna, rna, organic acids, and some of the
amino acids
o Water is the solvent in cells is always called an aqueous solutions
o Polar molecules
Hydrophobic (water fearing): do not dissolve in water, lipids (hydrocarbons),
some amino acids (e.g. those in integral membrane proteins that associate
with lipids)
Hydrophobic and hydrophilic are both very important for different biological
systems
Polar substances dissolve readily in water
Sodium and chloride ions are kept apart in water due to the electrostatic
interactions with the partial positive and negative charges
Hydrophobic molecules
No polar regions
Do not interact electrostatically with water
Disrupt h-bonds structure of water
Tend to coalesce with each other in water
o Oil and water because they cannot interact electrostatically
Water molecules tend to exclude molecules that disrupt hydrogen bonding
Hydrophobic interactions are a major driving force in folding of molecules
(like proteins), assembly of cellular structures, and membrane organization
o Hydrophobic interactions explain a lot in the cell. They form the way
they form and fold the way they do because of hydrophobic
interactions.
o Hydrophobic is a driving force explaining a lot of biology
