Chapter 2: Guidelines for Designing a Healthy Diet
Nutritional claims- standard of food, moderation is daily value
o Closely regulated by FDA
o What the vocabulary REALLY means
Good source- a serving contains 10-19% of the daily value for that
nutrient (calcium)
Excellent source- a serving contains 20% or more of the daily value for
that nutrient (Vitamin D)
Fat-free- contains less than half a gram of fat per serving (so not actually
truly fat-free)
Low-fat- contains 3 grams or less of fat per serving
Reduced fat- contains at least 25% less fat per serving than the reference
food

o How do we know what our nutrient need is?

1. Observation
2. Hypothesis- educated guess based on observations
3. Experiment
Epidemiological- making associations between things
o Example: fat and colon cancer shows a relationship but
does’t prove cause ad effect
Case-control- looking at someone with a nutritional deficiency
compared to someone without one
Animal- animals and people are enough related, but just because
it happes i a aial does’t ea it’ll happe to huas
4. Results- either support or refute hypothesis
5. Publish results in peer-reviewed scientific journal
o The results then become part of the scientific literature
and a source for new observation
o The most rigorous type of study is a randomized, double blind, placebo-
controlled study

o Each cell is a self-contained, living entity
o Cells: specialized structures
Cell membrane- separates outside and inside with a lipid bilayer
Cytoplasm- intercellular fluid
Mitochondria- AEP is made, powerhouse of the cell
