Consumption of whole grains that are high in fiber may reduce the risk of heart disease and diabetes. Endosperm: contains the highest amount of starch and protein; this is all that remains when a grain is refined. Bran: contains the majority of dietary fiber and a significant amount of b vitamins and minerals.
