Ethnic food: matzah ball soup, falafel, etc. Used as gifts, rewards, punishment, political tool, and a weapon of war. Late 1800"s: 80% of americans lived in rural dwellings. Today: less than 2% live on farms. The # of consumers fed by one farmer has dramatically increased over years in us (increase in crop yields and livestock production) Increase is agricultural advances have increased food supply. Consumption of home-cooked foods shifts to processed foods and eating outside the home. Late 1800"s: americans bought commodities and processed them at home whereas currently, americans consume mostly processed food.
