Food security: access at all times to enough nutritionally adequate and safe food for an active and healthy lifestyle. Food represents strong ethnic, psychological, and emotional importance: ethnic > matzaball soup, mexican food. Rural to urban population shift: late 1800""s approximately 80% of americans lived in rural dwellings > today less than 2% live on farms. Dramatic increase in crop yields and live stock production: 1940 > 12 people fed.
