Using peas for his experiments was useful they"re easy to grow, giving him a large sample to work with, and they have distinct natural variations such as colour, smooth/wrinkled, etc. This means that they have both male (stamen) and female (pistil) reproductive organs. Because of this, peas can self fertilise to create true breeding plants. Mendel removed the stamens from one plant and used them to fertilise the pistil of another plant that had had its stamens removed. This allowed him to create crosses and study the phenotypes of the offspring to understand how characteristics were inherited.
