These are known as monoglycerides, fatty acids and glycerol. This is because the body does not have a mechanism to absorb intact triglycerides. Lingual lipase is released at base of tongue (minor role in fat digestion in adults, but major in infants - digests short and medium chain fatty acids in milk for infants) Lingual lipase turns triglycerides into diglycerides and fatty acids. Churning of the stomach grinds solid pieces to finer particles, mixes the chyme and makes the fat into small droplets. These actions expose the fat to gastric lipase. Cck is released, which signals gallbladder to release bile. Most hydrolysis of triglycerides occurs in the small intestine. Fat digesting enzymes pancreatic lipases and other intestinal lipases digest fat. Emulsified fat --> pancreatic lipase --> monoglycerides, glycerol, fatty acids.
