For molecules floating in the air-- olfaction the sense of smell. Molecules that we put in our mouths-- gustation the sense of taste. The trigeminal system enables us to feel gustatory and olfactory experiences burning and cooling. Orthonasal olfaction sniffling in and perceiving odors through our nostrils, which occurs when we smell something outside of us (goes to the olfactory epithelium) e. g. smelling roses. Retronasal olfaction perceiving odors through your mouth while breathing and chewing: when we are smelling something that is inside our mouths and is what give us the experience of flavour (also goes to the olfactory epithelium) Olfactory sensations are called odors the translation of a chemical stimulus (odorants) into a smell sensation. Odorant a molecule that is defined by its physicochemical characteristics, which is capable of being translated by the nervous system into perception of a smell: e. g. given methyl to smell has the odor of mint.
