Drawing on rachel carson"s research, this chapter examines the complexities between our environment and our health and the difficulties and strategies involved in proving these linkages. The widespread use of pesticides and herbicides and their effect on health and the environment is studied through the pei potato industry and pesticide use. Cancer rates, particularly those linked to pesticide use, in pei for both men and women have steadily been increasing at a faster rate than in all of canada. The networks of agribusiness are described using examples of mcdonaldization and the coffee industry. Both produce widespread environmental devastation as well as health hazards to workers in large part through heavy pesticide use. Pesticides, banned in canada, continue to be used on coffee, and consumers are unknowingly being exposed to pesticide residues. The manufacturing of synthetic compounds such as plastics in everyday consumption are examined.
