Leads to food easily vilified (ie: transfat) or fetishized (flaxseeds, chia seeds, kale) Nutritional tinkering = creating of food hierarchy (foods are either glamorized or demonized) No distinction btwn industrially produced food and whole food. Foods are purposely modified to have health claims. Presence/absence of certain ingredients conceals broader implications. High consumption of processed foods is more important problem to be examining.
